Disgorged in March 2019, the latest release of Paul Laurent's NV Brut Rosé Cuvée du Fondateur is a pretty, Pinot Noir-dominated rosé from the Sézannais that spends 18 months sur lattes. Offering up aromas of red apple, ripe peach, plums and flowers, it's medium to full-bodied, fleshy and precise, with a charming core of fruit, ripe but racy acids and a pinpoint mousse. It's a terrific value that's drinking well out of the gates.
