The color is pink salmon. The effervescence is long-lasting, giving birth to a delicate mousse. This wine is rich and elegant. On the nose, it develops intense red-fruits aromas (wood-strawberries and wild raspberries). This wine is full in body and well-balanced, very pure and full of interesting nuances. The attack on the palate is lively with red fruit aromas and is quickly underpinned with the freshness of the pink grapefruit. It goes perfectly well with partridge, poultry, poached egg served on a bed of crusty bread and avocado with pink shrimps. This Cuvée Rubis would also be the perfect partner to lobster. This champagne will enhance its optimum qualities after 1 or 2 years ageing. All the year long, whatever the events, you will appreciate this festive, ample and round champagne.

(90% Pinot Noir and 10% Chardonnay; 10 g/l dosage; disgorged in September, 2013): Light, bright orange. Powerful red berry and orange pith aromas are complicated by notes of vanilla, brioche and potpourri. Sappy and sharply focused on the palate, offering intense strawberry and blood orange flavors and a zesty kick of white pepper. Closes creamy and very long, with resonating spiciness and an exotic touch of candied rose.

Disgorged in November 2016, the NV Brut Premier Cru Cuvée Rubis is showing very well, offering up a delicate but complex bouquet of blood orange, warm bread, pastry cream, dried flowers and iodine. On the palate, it's medium to full-bodied, with an understated but beautifully balanced profile, its attractively complete core of ripe, vibrant and gently phenolic Pinot Noir fruit underpinned by ripe but racy acids. The finish is sapid and chalky.
