Oracle Cabernet Sauvignon 2018

The fruit is carefully harvested, then partially destemmed and allowed to soak for 72 hours. Fermentation takes place in temperature controlled, stainless steel tanks. Pressed to tank and allowed to settle. A portion of the wine is then racked off into new oak and aged for 12 months. The result is a perfect expression of Mendocino’s distinct character or concentrated fruit and complex layers.
