Collefrisio Pecorino 2018
"Pale yellow color, aromas of flowers, white peppercorn, white peach, lemon and clementine. Good acidity, round, thick mouthfeel. Flavors of white peach, lemon, flowers and clementine. Long finish."
-Pecorino is a very old indigenous Italian varietal currently making a comeback, appreciated for its ability to thrive at higher altitudes and for its great structure. There’s high acidity, plus the alcohol, that allows it to gain complexity over time. Like a red wine dressed up as a white. It is an early ripening variety that tends to naturally produce low yields.
