Our vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterised by their freshness, power and tenacity.
Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit).
This wine can be enjoyed within 2 years, an excellent match for seafood or fish.
The 2016 Chablis offers up notes of grapefruit, green apple and rock salt, followed by a medium-bodied, open-knit and delicately honeyed palate. It's clean and correct but somewhat diffuse. Founded in 1959 with a mere two hectares, today the Domaine Bernard Defaix consists of fully 27 hectares (certified organic since 2009) whose fruit is supplemented with purchased grapes. Much of the production is fermented and matured in stainless steel, though the Chablis Vieilles Vignes and several of the premiers crus, as well as the Grand Cru Bougros and Vaudésir, see varying percentages of wood, the bulk of it used. The wines are classic and tangy in profile, making allowances for the challenging 2016 vintage—a year that represented merely 30% of a normal crop and which Defaix characterizes (and I don't dissent) as resembling a hypothetical blend of 70% 2013 and 30% 2012.
