The 2012 Vellum Cabernet Sauvignon beams confidence and presence in every regard. It is classic in stature and form and bounds from the glass to immediately grab attention. The nose is ladened with heady notes of black raspberry, pure cassis, dark cherry, vanilla bean and winter and exotic spices. All are sinuously entwined. The palate delivers intense succulent dark fruit matched to the nose, but completing with a foundation of late summer understory and a lingering sweet tarry succulence. This ample wine stretches its frame with purpose in length and breadth, carrying adroit focused tannin uninterrupted to a long satisfying and persistent finish.
Food Pairing: Perfectly matched with beef, poultry, lamb, BBQ and blackened seafood.
From grapes grown in Coombsville, this blends in tiny additions of Petit Verdot and Merlot. Earthy in leather and fresh compost, it remains light-bodied and dry, despite a large tannin presence, the finish marked by pencil shavings and herbs.
