Brewery: Isojiman Shuzo • Prefecture: Shizuoka • Rice: Hyogo A Grade Yamada Nishiki milled to 55% • Water: Soft spring water from the Minami Alps • Yeast: Proprietary House Yeast• ABV: 15-16%

1. A light bodied Honjozo with a silky texture and a definitive clean finish perfect for food pairing.
2. Soft aromas of steamed rice and chestnuts, flavors of candied nuts and dried tropical fruit.
3. As with all Isojiman items they take a full 72 hours to grow their koji, allowing for incredible depth of flavor and defined structure.
4. The added alcohol allows this sake to maintain its structure and allow flavors to deepen and develop weeks after opening.
